His journey began at his parents’ bee hoon stall and later took shape at Fat Cow, Kinki, and Kabuke. At TANOKE, he blends washoku tradition with contemporary creativity, presenting elegant, umami-forward dishes thoughtfully paired with sake. A finalist at Japan’s World Washoku Challenge in 2015 and 2016, he continues to celebrate heritage through modern Japanese dining.
