Featuring a selection of expressive Japanese sakes and wines, this session uncovers how acidity brings brightness and structure, while umami adds depth and roundness, and how both elements shape the way we perceive flavour.
Guided by Master Sommelier Joshua Kalinan, guests will experience these contrasts firsthand, from the sharp lift of citrus to the savoury richness of kombu, alongside light, thoughtfully paired bites.
